Using AND makes sure that each of your keywords is in every result. Combine keywords with AND to reduce the number of results in your search.

Why would you want to reduce the number of hits? You don't always. If you did a search and only had 20 results, you probably don't need to reduce it any more. You can easily look at the 20 results and determine if any of the articles are right for you.

However, if you did a search and found 250,000 matches (yeah, that happens sometimes), there are probably too many results to look at unless you have a lot of free time on your hands. You would want to reduce the number of results by adding another keyword and combining those keywords with AND.
